Perry Knights of Columbus roast hog for parish potluck

The smells were as appetite-inspiring as expected overnight Saturday as members of St. Jude Council 1243 (Perry) of the Knights of Columbus roasted the hog for Sunday’s St. Patrick’s parish potluck. The potluck piggy will be served starting at 1 p.m.. at the Pattee Park shelter house. All parish members are invited to attend.

Weighing in at a little more than 200 pounds, the hog was graciously provided by Greg Kautzky. After rendering, about 120 pounds of pork — minus organs, which were not roasted — was available for the long, slow and delectable process of rotisserie roasting.

Over charcoal and applewood chips, a crew consisting of the Rev. Chris Reising, Grand Knight Peter Meis, Gary Becker, Jim Cornelius, Tom Fickbohm, Mark Ruellas, Jon Wilson, Mike Wilson, Jeff Webster, Mike Caufield and Riley Clark began roasting the pork at 10:30 p.m. Saturday at the Pat Gasche residence in Perry.

Knights remained on duty overnight, tending to the cooking and enjoying fellowship while praising the lower humidity and far more tolerable temperatures that succeeded the week’s earlier broiling.

St. Patrick’s parish members who plan to attend the potluck are asked to bring a covered dish and dessert, along with their own table service.
