Knights of Columbus roast hog for parish picnic

The annual St. Patrick's Parish Potluck drew a large crowd.

St. Patrick’s held their annual parish picnic Sunday in the gym at St. Pat’s school, and the gathering drew a large crowd of hungry parishioners.

The featured item was 200 pounds of pork, which was prepared from 10 p.m. through 10 a.m. behind the school by the Knight of Columbus Council 1243, with apple wood chips, spices and plenty of charcoal creating a tempting smell that was detectable from several blocks distant.

The donated hog and smoker were attended by the Rev. Chris Reising, Jim Cornelius, Gary Becker, Jon Wilson, Joe McCarty, Mark Ruelas, Jim Caufield, Grason Hill and Jeff Webster, all members of the KC.

Parishioners brought a variety of salads and side dishes to share, along with a great number of desserts and drinks. None left hungry, and the whole hog found its way unto the plates of eager diners.

By 4 a.m. the 200 pounds of pork had been cooking for nearly six hours — about half the time needed for perfection.
